Some of our recipes traditional...
La Ribollita
Given that this dish exist many versionsAnd that ribollita really is nothing but a vegetable soup to which is added to the bread and then re-cooked (re-boiled), we give you our recipe.
Put to cook the beans in salted water with garlic and sage.
In a saucepan, sauté onion, celery and carrot into small pieces with olive oil.
Combine finely chopped leeks, cabbage leaves above "parades" the cabbage and chard.
Add the tomatoes and cook covered.
Toast of stale Tuscan bread and add to vegetables along with half the cooked beans and mash and the other half whole.
Add the thyme (thyme) is still a little oil, salt and pepper and boil scrambling to make that bread is discarded completely.
Trippa alla Fiorentina
Finely chop the onion and soften with a little oil.
Combine tripe cut into strips, salt and pepper and deglaze with white wine.
Add the tomato and to withdraw (should not be "soupy") about twenty minutes.
Before removing from heat add a knob of butter and a nice "incaciata" parmesan.
Serve hot with more Parmesan cheese separately.
Fiorentina steak
This is not a real recipe, but to follow the few rules and avoided some mistakes that we report below.
Do not cook on hot plates, grill or even worse non-stick pans! Only charcoal grill to live without flame.
Not marinatela not salted before cooking, do not turn it over once and use the shovel and the fork, but especially not cook more than 5 / 6 minutes per side. The steak, top 3 or 4 cm just eats "the blood" seasoned with salt and pepper.
Chicken liver crostini
Brown the onion with butter and a little oil and a sprig of sage.
Combine chicken livers, sprinkle with vin santo and pepper and cook about fifteen minutes.
Once removed from heat and add capers, anchovy fillets and mince not too late if necessary adjust salt.
Spread on toasted bread toasted
